Can I back-up cloud applications?

Nowadays you can also purchase almost all applications in subscription form, as-a-Service. This is useful because you don’t have to maintain any systems yourself and you don’t have to worry about updates and upgrades. But not only the applications are in the cloud, the data is also there. Is it sufficiently protected in your opinion? Do you have maximum control over the data in the cloud?
